Preparation of the basic sauce takes ages, even then the finished curry recipes still lack something that the restaurants have.I usually have to add curry powder and loads of salt to be able to taste the products.

After eating at curry houses for many years this book gave me the opportunity to recreate the taste of high street Indian restaurants, great if this is what you want at least you can save money this way but this is not high end quality Indian food cooking.

What can I add that hasn't been said over the last 10 years? The fact that my wife, an Australian with little experience of, and not much interest in, Indian cooking absolutely raved about my first attempt. By the second she has become a complete convert. It simply is as good as everyone says.

For the bad reviews of this book I must assume that people failed to read and follow all the instructions to completion. If you follow all the instructions - for example letting the initial boiled ingredients cool(I would recommend 24 hours here - if you don't then it won't go 'golden' later) then things work as anticipated. Some of the timings are perhaps slightly short, but if you go with the descriptions for each stage instead, then all will be fine.

Perhaps the problem is essentially one of what the basic 'sauce' is. By making it you are effectively skipping a whole lot of traditional preparation steps for making curries in an authetic manner, but you are not making a 'curry' sauce. It is simply another component of the final curry and nothing like going to buy a jar at the supermarket.

So, read the book properly and follow all the steps and all should be fine. Oh and if you think there is too much salt or not enough spice, then do adjust to taste! However don't expect to find out what the dish really tastes like until it is almost finished, this is cookery on faith.

Buy it, read it and try it.

This is a small gem of a book. Like a paperback novel ( and it is the same size) this takes you step by step through the intricacies of curry's great and small. The book is easy to use, very straightforward with clear explanations. As a working book for busy foodies its perfect. There are no pretentious and often preposterous pictures of sublime food to make you feel overwhelmed but there is lots of good clear advice, clear directions and menus. This is a book that does exactly what it says it will do for you. If you like curry's its perfect, if you are curry novice then its ideal and if like me you are a curry fan - it's a real dicovery.

So highly recommended for clarity and simplicity - the curry secret is out so buy it!

you can see my review for the newer edition of this book and its the same. this book is 100% excellent. if you want to dabble in proper home made curries but dont know how or which book to trust. this is it! every recipe is amazing and works perfect and you will be droolingly amazed at what you can turn out. the best of the best is this.....!!!!!!!!!!!!
